    The Marriott Marquis is often referred to as the "Flagship" NYC Marriott hotel. With well over 100,000 square feet of banquet space this property ranks as one of the highest grossing banquet facilities in all of Marriott. My responsibilities at The Marriott Marquis included all culinary aspects of Banquet functions, outlet support and maintaining a full service employee cafeteria. With multiple ongoing functions that ranged in size from 20 to 2500, organization and planning became a key to our success. The Banquet Kitchen is comprised of several different areas including a sauce kitchen, butcher and Garde Manger as well as roast and sauté stations.
